my life in a new city
 

a couple weeks ago i thought it would be fun to make something different for dinner. I know the kids love chipotle, but there isnt one very close, and its expensive. so i decided to try and recreate it at home. it was a hit and the kids loved it! and it was easy to make also! there are pics of most of the steps, but there are a few simple steps i didnt reach for my camera for (im sorry!) 

this recipe would also work if youd prefer to eat it burrito style. just instead of using bowls, place on large flour tortilla and roll up. 

comment below if youve ever done anything like this at home and did something different. im always open to suggestions on ways to improve things or just try something different!

copy-cat chipotle rice bowls/burritos

ingredients:
1 lb ground beef/turkey
1 pkg taco seasoning
1 tomato
1 red onion
fresh cilantro
1 cup basmati rice
1 can black beans
4 limes
3 jalapenos
1 tbsp butter
1 bag frozen corn
1 bag mexican style cheese
shredded lettuce

-in a large pot melt butter. add 1 cup rice and 2 cups water. cover and let simmer. once cooked add 1 tbsp cilantro and lime juice of 2 limes (add more for preference) let cook over low heat for a couple minutes
-in skillet brown ground beef/turkey and add taco seasoning according to package
-dice up tomato, onion, and jalapenos, set aside
-in a pot cook corn. add onions, cilantro and jalapenos. cook over medium heat for a couple minutes
-heat black beans in small sauce pan until bubbly

-add rice to bottom of bowls, followed by meat, corn, beans, lettuce cheese, tomatoes, and sour cream (or whatever you prefer on your bowls or burritos)
-eat and enjoy!
